Can we take a minute to talk about green stuff? Last week I was feeling really under the weather, which I think was in part because I have been literally all over the map lately and work has been extra crazy. If you follow me on Instagram, you may have noticed that I have to travel a LOT for work. Usually it’s just around the province, but it still means that I spend tons of time on planes, in cabs, and sleeping in hotels. Anyway, February was jam-packed with travel (and stress!) and by the time that I finally got out from under it all I was totally fried. I ended up catching a nasty cold and had to stay home from work in order to recoup. In the interests of minimizing my downtime, I decided to concoct a green smoothie full of ingredients that would help support my immune system and kick the cold in the butt. Thus, this immunity boosting green smoothie recipe was born!
I don’t know about you, but I find that I always feel better if I regularly incorporate greens and green supplements into my diet. In particular, I love having a big smoothie filled with spinach or kale, cucumber, celery, HealthForce Vitamineral Green powder and just a little bit of fruit every day. I usually try to have this through the week first thing in the morning, to help get in lots of nutrients before I eat breakfast. In our house, smoothies are usually for either flavour or function, but never both. This immunity boosting green smoothie is definitely more of a functional drink. It’s not the sweetest or the tastiest smoothie I’ve ever made, but it sure did serve its function of getting back on my feet in record time (and with some added energy, to boot).
The leafy greens in this recipe are a super potent source of nutrients, and contain lots of iron, calcium and vitamins A, C and K. I also added some camu camu powder because it has one of the highest concentrations of vitamin C of any food source, so it stimulates white blood cell production and significantly boosts the immune system. Fresh ginger and turmeric roots are both also great because they have powerful anti-inflammatory and antioxidant effects. Ginger helps encourage your body to sweat out toxins, and turmeric is both antiviral and antiseptic. I recommend adding black pepper too, in order to make the turmeric more readily absorbed in the body as well as to help soothe irritation, reduce fever, and clear mucus. In order to sweeten things up a little bit, I threw in a handful of frozen pineapple, but if you don’t have any on hand you can substitute in any other fruit you like.
- 4 cups raw washed spinach or kale
- ½ fresh cucumber
- 1 cup frozen pineapple or other fruit of choice
- 2 tbsp greens powder
- 1 inch piece of fresh ginger
- ½ inch piece of fresh turmeric (or 1 tbsp powdered turmeric)
- 1 tsp black pepper
- 1 tsp camu camu or other vitamin C powder
- Add all ingredients to a high powered blender and blend until smooth
- Drink fresh or refrigerate/freeze for longer storage
